  • Pot Roast with Pureed Vegetable Gravy – Once upon a time,Sunday dinner in the typical American household was pot roast, served with a brown gravy made from fat drippings thickened with flour or, in the hands of more adventurous cooks, from a package of onion-soup mix. This pot roast has lots of old-fashioned flavor, without the fat or processed taste. The meat is cooked with a medley of chopped vegetables, which are then pureed to a smooth, deep-flavored sauce. Serve with broad noodles.
