It is always fun for me to return to Copia. I worked there as the Culinary Programs Manager a few ago and will never forget the many great people I met while I was there. The gardens were my favorite haunt during my time there. In the summer I especially loved the fig trees. There are two sturdy Black Mission trees that kept my classes supplied on a regular basis, one lovely and more delicate green fig tree with especially sweet, juicy fruit. But my one true love was a small fig tree planted in a large pot. The figs it bore were shaped like large tear drops covered with a dusty violet skin. I think the variety is called Celeste. At any rate going back to Copia, walking through the pretty garden, seeing old friends, and making new ones will be great fun. I hope you can join me.

Marie’s teaching at Rancho La Puerta in Tecate, Mexico

I’m excited to be returning to Rancho La Puerta in Tecate Mexico for a third time. If you’ve never been there check out their web site at www.rancholapuerta.com . The word beautiful doesn’t begin to describe the buildings, the landscaping, the geography, the experience, and the people. The handsome new cooking school, La Cocina que Canta—“The Kitchen That Sings!” has been a smash hit since it first opened its doors almost two years ago. When you see it, you’ll understand why. Surrounded by the Ranch’s six acre organic farm it’s a cook’s dream come true. I will teach two hands-on classes and one demonstration class in one large state of the art kitchen designed to be both functional and artistic. The splash backs are adorned with brightly colored tiles, the counters covered in stainless steel, the cabinetry hand crafted wood. While we chop and stir and make new friends we will take a moment to gaze out the enormous window in the dining area to a breathtaking view of the amazing fruit, vegetable and flower gardens and beyond to the magnificent sacred Mt. Kuchumma. It is a terrific experience. My teaching style is relaxed and fun. My recipes will be typical of my passion for simple, sophisticated, well seasoned, healthful food.
