Marie's specialty is recipe development. With over a dozen books to her
name she has created many hundreds of delectable, mouth-watering dishes. Here is a sampling to whet your
appetite.
Crisp Cheese Crisps and Figs – These tender, cheesy crisps are
similar to the Italian delicacy called frico, from the region of Friuli in northeastern Italy.
Italian Style Stuffed Eggs – These Italian style
stuffed eggs are unique because the yolks are blended with olive oil instead of mayonnaise.
Dutch Baby with Cardamom Honey Apples – Sometimes called a popover
pancake, this audacious-looking flapjack puffs up as it bakes in the oven and is topped with a delicious
apple topping.
Soups
Shiitake Beef and Red
Rice Soup with Spinach – In this hearty soup soy sauce, shitake mushrooms and red rice are
complemented by the richness of the beef broth and the herbal quality of the spinach.
Parsley and Rice Salad with Parmigiano-Reggiano, Pignoli and Dried
Tomatoes – This unusual salad was inspired by bunches of freshly harvested Italian parsley with small
tender leaves at my local farmer's market.
Fresh Fig and Asiago Cheese Frittata – Sweet fresh figs,
slightly tangy young Asiago cheese, and a mildly salty prosciutto provide the perfect balance in this
unusual frittata.
Spaghetti
alla Carbonara – A classic Roman dish of steaming-hot spaghetti, bits of crisp cooked pancetta and a
delicate custardy coating of egg and cream.
Parmesan Rice – Make this recipe when you want the
taste of risotto but don't have an extra hand for stirring. A family favorite, it is affectionately called
"Cheesy Rice."
Lemon Crème Brûlée – A silken,
creamy pudding contrasts with a glassy crackling caramelized sugar glaze.
Cinnamon-Ripple Coffee Cake Muffins – An adaptation of a classic
light buttermilk batter, with a sweet buttery brown-sugar-and-cinnamon crumb mixture that is swirled in
before baking.
