| | Chopped Lettuce, Red Pepper and Cucumber Salad
--Fresh herbs like dill, Italian parsley, cilantro, and basil are delicious added to this

large romaine (or other types) lettuce leaves, rinsed and dried, halved lengthwise
- 1
cucumber, peeled and quartered lengthwise, seeds removed
- 1 medium red bell pepper,
quartered, core and seeds removed, cut into 1/2 inch wide strips
- 1 tablespoon extra
virgin olive oil
- 1 tablespoon red wine vinegar
- Pinch of salt

| | 1. Stack the lettuce leaves, cucumber and red pepper in
bundles and cut across into 1/2 inch pieces. Continue to chop any larger pieces that may have
escaped. 2. Combine salad in bowl with olive oil, vinegar and salt. Toss to blend. Serve
